This, from a recipe by John Whaite, is absolutely gorgeous. It’s like McVities Jamaica Ginger Cake but more hardcore (it is seriously spicy) and less likely to fall into a squidgy mess the moment you look at it. Be warned though, you have to wait two days before you can eat it, but it’s been two days of very worthwhile anticipation.
