On the menu – aubergine parmigiana

This is Aubergine Parmigiana from Hugh Fearnley-Whittingstall’s Veg Everyday and it took ages to make (although actual hands on labour was not that intensive). The result was nice and I enjoyed the welcome pottering in the kitchen but I don’t really live a making aubergine parmigiana lifestyle, so other than the other portion I’ve currently got in the fridge, I’m not sure if I’ll make this again.
