This was so good, I could eat this every day of the week, Singapore noodles with cashews from the Vegan One Pound Meals book. I did switch the rice noodles for wheat noodles though, because ugh rice noodles. Will definitely be making again and it’s really quick and simple to do, so bonus!
Okay, after lunchtime’s success, the cashew pesto pasta, also from Vegan One Pound Meals, was really bland. It was a bit more of an effort too (as it required getting out the blender), so I feel a bit robbed.
