On the menu – Couscous Salad

Friday Above is Couscous Salad with Herbs and Walnuts from River Cottage Veg Everyday. It was nicer than I had imagined it to be (not normally that much of a fan of giant couscous).

On the menu – spelt salad

Sunday This is Spelt Salad with Squash and Fennel from River Cottage Veg Everyday and it was really nice. The veg just right and garlicky and cheesy and lemony. I will make again and I’m not even that keen, normally, on fennel.

On the menu – aubergine parmigiana

Friday This is Aubergine Parmigiana from Hugh Fearnley-Whittingstall’s Veg Everyday and it took ages to make (although actual hands on labour was not that intensive). The result was nice and I enjoyed the welcome pottering in the kitchen but I don’t really live a making aubergine parmigiana lifestyle, so other than the other portion I’ve…

On the menu – Super Easy One Pound Meals

Saturday Miguel Barclay has a new book out, yay! Okay I didn’t like his last one much but I loved his first one so much, I’ve still got faith. So, first up, One-Pan Lasagne, a lot of the recipes in this are one-pan (part of the Super Easy part), although it does assume that you’ve…

On the menu – Harissa Squash Salad

Friday This is another from Jamie Oliver’s Five Ingredients; Harissa Squash Salad and again, it was rather nice, I would definitely make again but I would add more harissa next time because I couldn’t really taste it.

On the menu – chicken lettuce cups

Friday This is a slightly adapted version of the Hoisin Chicken Lettuce Cups from Jamie Oliver’s Five Ingredients, I used barbecue sauce instead of hoisin, as hoisin contains soy, anyway, it was quite nice, although it would have been even nicer if the salad, chicken, mango and barbecue sauce had been in a (bread) wrap.

On the menu – Mexican Squash and Gnarly Chicken

Monday The above is a pared down version of the Mexican Squash recipe from Buddha Bowls by Hannah Pemberton, it’s just spicy squash, iceberg lettuce, yoghurt and some rather nice crackers that I got from the supermarket but it made for a lovely lunch. Tuesday This is Gnarly Chicken from Jamie Oliver’s Five Ingredients book,…

On the menu – Butternut Pasta Soup

Sorry for the recent On the Menu absence, my new job is seriously cramping my cooking style and I suspect it will continue to do so, so food posts will be sporadic, although my job is term time only, so more cooking may be done in the summer holidays. Tuesday This is Butternut Pasta Soup…

On the menu – Green curry noodle bowl and vegan banana bread

Friday This is Green Curry Noodle Bowl from the latest Happy Pear book, The Happy Pear – Recipes for Happiness. It was nice and definitely a recipe I may go back to in the future but compared to the other noodle things I’ve cooked recently, not as mind blowingly good. Monday This is vegan banana…

On the menu – Risotto Milanese

Wednesday I know how to make risotto, I’ve been making it for years but perhaps for so long, I’ve grown lazy and have developed too many shortcuts, my risotto is still nice but I thought, for once, I’d actually follow a recipe. This one is Risotto Milanese from the ever reliable Art of the Larder,…
